Over the past years, the KIPPKO tilting cooking kettle has been developed into a kind of "super cooker" due to the integration of modern technology to control the complete production process and monitoring of process data. The user has the ability to carry out all the following steps in the one machine where previously several machines would have been necessary.
To complete the flexibility, a weighing system for the vessel and control via computer allow optimum control of all the production steps.
The kettle heating is done indirectly with high pressure steam up to 10 bar overpressure or with thermal oil. Direct heating with filtered steam is also possible. The large capacity of heating channels guarantees a consistently high energy and heat transfer. As an option, indirect cooling via the jacket with either ambient or refrigerated water can be integrated.
In the KIPPKO, products can also be cooled directly with liquid nitrogen which is directly injected into the product. The advantage is a fast and highly gentle cooling of soups, sauces, stews and other products to temperatures below 10C.
